Pig Carcass Classification Training in Serbia draws enthusiastic participation from slaughterhouses

A recent training, within the EU-funded Twinning Project “Support the establishment of a carcass classification system in line with the EU Common Agricultural Policy”, held from 12th to 14th of September 2023, brought together 14 slaughterhouses, with a total of 18 enthusiastic participants, making a significant step forward in the country’s meat production.

This comprehensive training program was designed to enhance the skills and knowledge of professionals involved in the classification and processing of pig carcasses. The event provided a valuable opportunity for slaughterhouse employees to refine their abilities in assessing pig carcasses for ability and compliance with industry standards. The training module consisted of a theoretical and a practical phase developed on a minimum of 30 randomly selected carcasses, that lasted for ten hours.

Throughout training sessions, participants engaged in hands-on learning experiences, gaining insights into the complexities of pig carcass classification, grading and the key factors that impact the overall meat quality, using Fat-o-Meter, Optigrade, and ZP methods for enhanced accuracy and efficiency.  Participants in training course received in depth theoretical and practical training with SEUROP system for pigs: relevant EU and/or national legislation, carcass presentation, classification devices, labelling, weighing verification and price reporting control system.


This Training Program has been carried out by members of Ministry of Agriculture Forestry and Water Management and Faculty of Novi Sad that were trained in previous project activities, and was supervised by Latvian experts with extensive experience in the matter, with the support of Carnex and Djurdjevic meat industries. Expert instructors led discussions and practical demonstrations, ensuring that attendees left with a deepened understanding of the subject matter. 

Participants expressed their satisfaction with the training program, highlighting its practical relevance and the positive impact it will have on their day-to-day operations.

The organizers are grateful for the active participation of the slaughterhouses and the dedication of the participants. Such collaborative efforts contribute to the continuous improvement of Serbia’s meat processing industry, ensuring that consumers receive high quality products.
